So while I am not 100% vegan 100% of the time, I do LOVE to enjoy vegan meals and truly feel both my mental and physical health benefit from more plant-based whole foods. One of my favorite places to find new recipes to enjoy is Pinterest. Today I wanted to share with you 8 of my favorite vegan recipes, from Banana Bread Oatmeal to S’mores Pop Tarts!
Vegan Banana Bread Oatmeal
Let’s start off with a breakfast staple – oatmeal! But this isn’t just any old plain, boring pot of oatmeal. This recipe for Banana Bread Oatmeal will seriously amaze you – it is SO good! Also, not only is this recipe vegan, it is also gluten-free!
Vegan S’mores Pop Tarts
Now this one can either be a breakfast, dessert, snack, really whenever your taste buds desire, haha! If you didn’t catch my recent blog post on how to step up your S’mores game, you probably didn’t know my obsession with S’mores. The fact that this recipe allows you to make them vegan and in Pop Tart form, I mean COME ON, what could be better?
Vegan Zucchini Fritters
Moving on to one of my FAVORITE side dishes, zucchini fritters! This vegan recipe is absolutely perfect for all the zucchini you are growing in your garden or finding at local farmers markets. These fritters are great plain or dipped in your favorite sauce, such as ketchup, vegan sour cream, or balsamic vinaigrette.
Vegan Stir Fry
Very popular stir fries (for non-vegans) are chicken and broccoli or beef and broccoli, but I would bet money that this Mushroom and Broccoli Stir Fry seriously beats out those two previously mentioned. And not only is stir fry delicious, it is SO EASY, making this vegan recipe perfect for a weeknight dinner.
Vegan Herbed Potato, Asparagus, Chickpeas
In keeping with the theme of EASY, this vegan sheet pan dinner is probably one of the most delicious easy recipes I have tried. Putting all the ingredients together and popping it in the oven leaves me time to do other things while the smell wafts through the air, and before I know it dinner is ready! This vegan recipe is also great for when you are hosting people over for dinner with little time to prep or find specific ingredients, since the majority of the ingredients this recipe calls for are often found in the majority of kitchens.
Vegan, Gluten-Free Cornbread
Speaking of hosting, who doesn’t love having either dinner rolls or some type of bread to be served as an appetizer or with dinner? I’m pretty sure that is one of the best parts of the meal! But when being vegan and/or gluten-free, it is often hard to partake in this delicious part of the meal. Well worry no more, this vegan AND gluten-free cornbread will be the highlight of your dinner party, trust me.
Vegan Quesadillas
Do you partake in Taco Tuesday or enjoy Mexican food? I personally LOVE Mexican food, so when I cam across this vegan recipe for Sweet Potato & Black Bean Quesadillas, I’m going to be honest. I was a bit weary. But these plant-based quesadillas are delicious! The flavors and textures all just fit so well together and it feels like the Mexican dish that was always missing from your life.
Vegan Cookie Bars
Okay okay, you guys know I just had to close out this blog with another little sweet treat! Chocolate and peanut butter. Name a better combo. I’ll wait.. haha! No but seriously, there will never be a better combination than chocolate and peanut butter and these vegan Chocolate Chip Peanut Butter Oatmeal Cookie Bars confirmed it.
