My Favorite Fall Recipes

August 1st means… FALL! No but seriously guys, I absolutely LOVE fall! The changing colors of fall leaves, the crisp air, apple and pumpkin picking, and cozy fall recipes. There is nothing better!

With fall quickly approaching, I wanted to go ahead and share with you 7 of my favorite fall recipes! From soups and stews, to side dishes, main courses, and dessert! Here we go!

Butternut Squash Soup

Picture this. There’s a slight wind in the night air and you are settling down for the evening with an amazing book. A delicious smell is wafting from the kitchen and your timer goes off, your hot, creamy bowl of Butternut Squash Soup is ready!!

This recipe is seriously to die for! Sabrina expertly incorporates carrots, celery, apples, and butternut squash for the ultimate fall soup combination. Top with nutmeg or a dash of cinnamon and viola! Perfection!

Autumn Pumpkin Apple Stew

You all know my love for Farmer’s Markets and CSAs (and if you don’t, check out this blog), so when I found this recipe you can bet how ecstatic I was! I literally can get 99.9% of the ingredients from my local Farmer’s Market, swoon!

Fresh onions, garlic, kale, tomatoes, pumpkin, apples, parsley, and oregano – YUM! This stew is a fall recipe worth sharing with friends and family, for sure!

Vegan Pumpkin Mac and Cheese

Mac and Cheese is the ultimate comfort food, right? So why not take an already amazing dish and put a little seasonal spin on it? And better yet, make it vegan!

This recipe for vegan pumpkin mac and cheese seriously could NOT get any better. It is the perfect main course or side dish for a cozy fall night!

Stuffed Acorn Squash

We all need a dish that is just SUPER simple to make but also EXTREMELY delicious, am I right? (Yes!) Look no further! This recipe takes less than one hour and can be modified to fit any of your needs – vegetarian, vegan, gluten-free, different meats/cheese, etc.

Squash is one of my favorite fall recipe ingredients, and there is something about acorn squash that just reminds me fall is in the air! So here it is – acorn squash, stuffed with turkey, mushrooms, and apples, topped with melty cheddar cheese – yum!

Pennsylvania Dutch Apple Butter

Being a Marylander, Pennsylvania Dutch Country is one of my favorite destinations! Lancaster County has so much to offer and is the perfect day trip. If you are wanting to make the weekend out of it, and since you are already in Pennsylvania, head on over to Airydale Retreat for the best glamping get-away!

One of my MUST buys when visiting Pennsylvania Dutch Country is Apple Butter. It is perfect on toast, biscuits, crackers, with a spoon (I won’t judge, haha!) To be honest, I had NO IDEA how easy it was to make. This apple butter recipe is definitely going to be made weekly in our household.

Crustless Pumpkin Pie Cupcakes

Let’s be real here guys, the BEST part of any pie is the filling. If you disagree.. well.. we just have different opinions haha, which is OKAY, but I mean really, pie filling > pie crust, always in my book! And it can’t be fall without Pumpkin Pie!

This Pumpkin Pie Cupcakes recipe is my favorite, because not only is it simple with minimal ingredients, it is also a huge hit at holiday gatherings. No more searching and guessing what you are going to bring to Aunt Sue’s for Thanksgiving, this right here is your answer! I promise!

Vegan Apple Pie

And last, but most certainly not least, Apple Pie! My love for apple picking has always left our home full of apples, so you better bet I searched to find delicious ways to use them. This vegan apple pie recipe was at the top of my list.

While not fully vegan, I love incorporating vegan meals into my lifestyle, however, vegan desserts sometimes tend to be a bit trickier. What I love love LOVE about this recipe is the simplicity of it it, even with being vegan! It seriously is the best and whenever asks me for the perfect fall desert, this is the first one I suggest!
